I found a Microsoft stress test tool that simulates a typical SQL I/O workload, it can be downloaded from Microsoft site here but is not supported by PSS use at own risk.
It can be used to determine the I/O capacity of a given configuration. It is a very useful tool and it has some helpful documentation (a 47-page white paper) which explains how to monitor disk
